I offered to bring sugar cookies to my daughter’s thanksgiving potluck. Instead of running out to Target, buying sugar cookie dough and getting them baked last minute on Tuesday night. I thought I’d try to make them ahead of time with things I already had in the house. I took inventory of my pantry and actually came up with a good recipe! So good…I already ate three.
Here’s my recipe
- 1 box of classic white cake mix (I for some reason usually always have one of these in the house)
- 2/3 C of wheat flour
- 2 eggs
- 1/3 C vegetable oil
- 2 tbsp. 2% plain Fage yogurt
Mix all ingredients together and it will form a big cookie dough ball like this.
Roll individual cookies. For a little added sweetness…I rolled each cookie in sugar before placing it on the baking sheet.
I set the timer to 12 minutes and baked at 350 degrees.
I had the cookies complete, kitchen cleaned and finished in less than 20 minutes.
Since my daughter doesn’t need them until Wednesday…here is my trick to keep them fresh…store them with a piece of bread. It’s a game changer!
