Simple Last Minute Sugar Cookies

I offered to bring sugar cookies to my daughter’s thanksgiving potluck. Instead of running out to Target, buying sugar cookie dough and getting them baked last minute on Tuesday night.  I thought I’d try to make them ahead of time with things I already had in the house. I took inventory of my pantry and actually came up with a good recipe! So good…I already ate three.

Here’s my recipe

  • 1 box of classic white cake mix (I for some reason usually always have one of these in the house)
  • 2/3 C of wheat flour
  • 2 eggs
  • 1/3 C vegetable oil
  • 2 tbsp. 2% plain Fage yogurt

Mix all ingredients together and it will form a big cookie dough  ball like this.

Roll individual cookies. For a little added sweetness…I rolled each cookie in sugar before placing it on the baking sheet.

I set the timer to 12 minutes and baked at 350 degrees.

I had the cookies complete, kitchen cleaned and finished in less than 20 minutes.

Since my daughter doesn’t need them until Wednesday…here is my trick to keep them fresh…store them with a piece of bread. It’s a game changer!

How to Make 4 Ingredient Oatmeal Funfetti Cookies

I love baking with Funfett! This weekend I decided to mix two of my favorite cookies into another healthy(ish) unique cookie. Oatmeal Funfetti Cookies! It was very easy to make and I only 4 needed ingredients!

  • Ingredients
    • 1 box Pillsbury Funfetti cake mix
    • 1 cup Oatmeal
    • 1 container non- fat plain greek yogurt
    • 1/3 C applesauce (not pictured)

Mix everything together

The dough is a little sticky… roll into balls or  simply place on cookie sheet. I then topped each cookie with a little extra oatmeal for texture & added fiber.

Bake at 375 for 17 minutes. (I checked them at 12 minutes and knew they needed more time. Similar to a cake mix you should check the middle of the cookie before taking them out of the oven)

Whole wheat flour chocolate chip cookies

  • 1 egg
  • 3/4 C Brown Sugar
  • 1/4 C Sugar
  • 1.5 sticks of softened butter
  • 1 tbsp. Vanilla Almond Milk

(mix all ingredients together)

Then add:

  • 2 cups whole wheat flour
  • 1 tsp. baking powder
  • pinch of salt
  • 3.4 oz vanilla pudding

(mix all ingredients together)

  • add 2 cups chocolate chips

(Roll into cookie dough balls & put in the fridge for 2 hours)

Bake for about 14 minutes @350 degrees.

Oatmeal Chocolate Chip Lactation Cookies

I’ve chosen to exclusively breastfeed my 4 month old daughter. Some days I worry I don’t have enough milk, when I do, I turn to these cookies. I tried a couple different recipes online, they were all great but I felt they were high in calories. So I swapped out a couple high fattening ingredients to add some more health to these.

Even if you aren’t breast feeding or looking to make more milk, these are just good cookies with healthy ingredients. It’s a win-win:)

Ingredients

  • 3 C Quaker Oats
  • 1 1/2 C Whole Wheat Flour
  • 3 TBSP. Brewer’s Yeast
  • 5 TBSP. Ground Flaxseed
  • 1 TSP. Baking Powder
  • 1/2 TSP. Cinnamon
  • 1/4 TSP. Salt
  • 1 Avocado
  • 4 TBSP. Natural Peanut Butter
  • 1 1/2 C Sugar
  • 1 C Chocolate Chips

Directions

  • Mix all dry ingredients, except sugar, together
  • In separate bowl, mix avocado, peanut butter & sugar
  • Note for peanut butter, try to use the oil that pools on the top for more liquid and better mixing
  • Add dry ingredient to wet
  • Mix in chocolate chips
  • Roll into balls
  • If you don’t like “ball” style cookies, flatten with a spatula
  • Bake for 12 minutes on 350.
