Chocolate Boozy Desserts

I like to make desserts that don’t skip on flavor and don’t make people feel restricted but also are portion controlled. I’ve always had a problem with a huge plate of cookies in front of me or a giant table filled with desserts. I always ate too much and always regretted it. Because of that, whenever I host a party I try to be mindful with my desserts. I try to only have 1-2 desserts and I also try to make them feel portioned.

This past weekend I hosted a party and decided to try my hand at a couple boozy chocolate desserts. They were fab! and satisfying, I don’t think any of my guests left feeling overstuffed:)

First: Boozy Chocolate Pudding Shots

  • 3/4 Bag of a large chocolate pudding bag ( I think a small would suffice also, but I had a large)
  • 1 C Whole Milk
  • 3/4 C Baily’s Irish Cream
  • 1- 8 oz. tube of cool whip
  • 1 bag of giant marshmallows
  • Candy Candy Garnish (optional)


Start by mixing the pudding, milk and Irish cream together.


Fold in whole container of Cool Whip.


For chocolate pudding shots, pour into individual shot sized portions and garnish with candy canes or candy cane sprinkles.


Place in fridge. Note I finished these at 5 pm and served them at 10 pm and they were perfect.

For the boozy chocolate marshmallows

Dip half of the marshmallow in the pudding mix. And garnish with candy cane sprinkles or other topping of choice.

Place in fridge until ready to serve.







Simple Last Minute Sugar Cookies

I offered to bring sugar cookies to my daughter’s thanksgiving potluck. Instead of running out to Target, buying sugar cookie dough and getting them baked last minute on Tuesday night.¬† I thought I’d try to make them ahead of time with things I already had in the house. I took inventory of my pantry and actually came up with a good recipe! So good…I already ate three.

Here’s my recipe

  • 1 box of classic white cake mix (I for some reason usually always have one of these in the house)
  • 2/3 C of wheat flour
  • 2 eggs
  • 1/3 C vegetable oil
  • 2 tbsp. 2% plain Fage yogurt

Mix all ingredients together and it will form a big cookie dough  ball like this.

Roll individual cookies. For a little added sweetness…I rolled each cookie in sugar before placing it on the baking sheet.


I set the timer to 12 minutes and baked at 350 degrees.

I had the cookies complete, kitchen cleaned and finished in less than 20 minutes.

Since my daughter doesn’t need them until Wednesday…here is my trick to keep them fresh…store them with a piece of bread. It’s a game changer!

Whole wheat flour chocolate chip cookies

  • 1 egg
  • 3/4 C Brown Sugar
  • 1/4 C Sugar
  • 1.5 sticks of softened butter
  • 1 tbsp. Vanilla Almond Milk

(mix all ingredients together)

Then add:

  • 2 cups whole wheat flour
  • 1 tsp. baking powder
  • pinch of salt
  • 3.4 oz vanilla pudding

(mix all ingredients together)

  • add 2 cups chocolate chips

(Roll into cookie dough balls & put in the fridge for 2 hours)

Bake for about 14 minutes @350 degrees.
